Caribbean hotel’s pastry chef takes home gold in local culinary competition

PORT OF SPAIN, Trinidad – Hyatt Regency Trinidad’s Chef de Partie Pastry Kendell Mulzac, was recently awarded the gold medal and the title of “Pastry Chef of the Year 2012” after competing in a culinary competition organized by the Trinidad Hotels Restaurants and Tourism Association (THRTA).

“We are very proud of Kendell and the way he has represented our hotel at this important competition,” said Russell George, general manager of Hyatt Regency Trinidad. “Our entire culinary team sets a very high standard and we look forward to Kendell’s and the team’s success in the regional competition.”
As a competitor, Mulzac was required to use ingredients indigenous to Trinidad and the Caribbean. After countless hours in the kitchen testing recipes and making adjustments, Kendell created a dish he calls “A Taste of Tropical Flavours,” consisting of coconut crème caramel atop pineapple cassava pone, served with guava beet sauce and passion fruit mojito semi-macerated fruit. The competition, featuring a total of 23 chefs and 17 bartenders, was hosted at the Trinidad and Tobago Hospitality and Tourism Institute (TTHTI). Taking home the gold with this dish now qualifies Mulzac to compete with the other members of the National Culinary Team in Miami this June.

“I’m very much looking forward to the next level of competition and representing Hyatt Regency Trinidad,” said Mulzac. “Executive Chef Fernando Franco and my other colleagues have been very encouraging and I hope to make them proud again.”
